Recipe: Banana Muffins

Hello Readers,

I am sharing a very easy to make recipe today - "Banana Muffins". The entire procedure from "Prep to Bake" takes hardly 40 mins. This recipe doesn't contain all purpose flour and vegan friendly too. 

Ingredients:

  • Banana - 2 
  • Wheat flour - 1 cup
  • Oil - 1/3 cup (any oil with neutral taste) 
  • Brown sugar - 1/3 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Salt - a pinch
  • Vanilla essence - 1 1/2 tsp
  • Chocochips - 2 tbsp (optional)

Procedure:

  • Mash the bananas well along with brown sugar in a bowl
  • Now, add oil and vanilla essence to the mashed bananas and give a good mix
  • Mix all dry ingredients - wheat flour, baking powder, baking soda and salt in another bowl
  • Add dry ingredients mix to the wet ingredients in 2 to 3 batches and mix slowly in a single direction, until there are no big lumps
  • Finally, add two-thirds of the chocochips and mix the dough one last time
  • Scoop in the dough and fill two-thirds of the muffin cups
  • You can top up the muffins with 3-4 chocochips 
  • Bake the muffins in preheated oven at 180° C or 350° F for 18-20 mins

Tips:

  • Use ripe bananas for this recipe
  • If you prefer, you can replace brown sugar with white sugar. In that case, reduce sugar to 1/4cup, or if you like your muffins very sweet, you can still go with 1/3cup
  • I prefer to use sunflower oil for baking. You may use canola oil or vegetable oil too.
  • You can bake without muffin cups as well, just ensure to grease the pan well. 
  • Adding chocochips is completely optional
  • Baking time specified here may vary depending on the type of oven you use. Insert a toothpick at the center of a muffin and it should come out clean, indicating it is properly baked. Otherwise continue baking for couple more minutes (i.e., until the toothpick comes clean)

It's been quite a while I read Chetan Bhagat's novel. When I searched for his recent publishes, I was surprised to see two titles that missed my notice - One Arranged Murder and 400 days were published in the years 2020 and 2021 respectively.
