Recipe: Soupy Noodles

Noodles is an all time favorite for kids as well as adults. I generally make noodles with lots of vegetables to convert it into a healthy treat. This recipe will be slightly soupy making it even more enjoyable on a cold winter night!!!                                 


Ingredients:

  • Maggi Noodles Pack - 1 
  • Water - 2 cups
  • Onion - 2 tbsp (finely chopped)
  • Tomato - 2 tbsp (finely chopped)
  • Beans - 1/4 cup (chopped)
  • Carrot - 1/4 cup (chopped)
  • Peas - 1/4 cup (chopped)
  • Capsicum - 1/4 cup (chopped)
  • Spinach leaves - 1/3 cup (chopped)
  • Garlic - 1 tbsp (finely chopped)
  • Green chili - 1 (finely chopped)
  • Coriander powder - 1/2 tsp
  • Pepper powder - 1/4 tsp
  • Butter - 1 tbsp
  • Oil - 1 tbsp
  • Salt - as per taste
Procedure:

  • First heat 1 tbsp oil in a pan and saute capsicum for a minute and set aside. Do not overcook capsicum, it should retain its crunchiness 
  • In the same oil, saute spinach for a minute and set aside
  • Now, add 1 tbsp butter in the pan. After it melts, add chopped garlic and green chili and fry for 30 seconds
  • Add onion and fry till it turns translucent. To this, add tomatoes and fry until it becomes soft
  • Then add beans, carrot, peas, maggi masala, coriander powder, pepper powder and salt and mix well. To this add 1/2 cup of water and allow the vegetables to cook 
  • Once the vegetables are half cooked, add noodles and 1.5 cups water and cook till noodles get cooked well
  • Finally add sauted capsicum and spinach and remove from flame
  • Allow the noodles to settle for 5 minutes and then transfer to a bowl to start slurping while hot!!!

Tips:

  • You can use top ramen or yippee noodles or anything similar in place of maggi noodles
  • You can add mushrooms, broccoli, cauliflower, soya chunks, tofu, paneer etc. as per your taste
  • Frozen vegetables can also be used, however I prefer fresh ones, as they are healthier
  • Adjust water to get your preferred consistency of the noodles
  • If you like it creamy like me, add a slice of cheese, along with capsicum and spinach and stir well. This elevates the taste to next level!!!
